
Instructions:
Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool slightly.
In a large bowl, mix together the chopped hard-boiled eggs, sweet onion, and celery.
In a separate bowl, whisk together the mayonnaise, yellow mustard, sweet pickle relish, sugar, onion powder, and apple cider vinegar.
Add the cooked potatoes to the bowl with the egg mixture and toss to combine.
Pour the dressing over the potato mixture and stir until well coated.
Cover and refrigerate for at least 1 hour, or until chilled.
