
Instructions:
Preheat your oven to 350°F (175°C).
In a large skillet, brown the ground beef over medium heat, breaking it up with a wooden spoon as it cooks. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet, and continue cooking until the onion is soft and translucent.
Stir in the garlic powder, onion powder, dried oregano, cumin, chili powder, and kosher salt, and cook for an additional 2-3 minutes, until the spices are fragrant.
Add the can of refried beans and the tomato paste to the skillet, and stir until everything is well combined and heated through.
Warm up the tortillas in the microwave or oven, just until they are soft and pliable.
Spoon the beef and bean mixture onto each tortilla, and sprinkle a generous amount of shredded cheese on top.
Roll up the tortillas tightly, tucking in the ends to make sure the filling doesn’t spill out.
Place the burritos seam-side down in a baking dish.
In a separate bowl, whisk together the can of enchilada sauce and 1/3 cup of water. Pour the mixture over the top of the burritos, making sure to cover them evenly.
Bake the burritos in the preheated oven for 20-25 minutes, or until the cheese is melted and the sauce is bubbly.
Serve the smothered burritos hot, garnished with fresh cilantro, sliced avocado, or a dollop of sour cream, if desired.
