
Instructions:
Preheat the oven to 375°F (190°C). Line a large baking sheet with parchment paper and set aside.
In a large bowl, whisk together the eggs until they are light and frothy.
Add the oatmeal, baking powder, baking soda, brown sugar, flour, salt, and sugar to the bowl. Stir until well combined.
In a separate bowl, melt the butter. Once melted, add it to the bowl with the dry ingredients. Stir until the mixture is smooth.
Fold in the coconut flakes.
Using a cookie scoop or a tablespoon, drop mounds of the dough onto the prepared baking sheet, about 2 inches apart.
Bake for 12-15 minutes or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
