
Instructions:
Preheat a grill to medium-high heat. In a large bowl, toss the potato rounds with the olive oil, salt, and pepper.
Grill the potatoes until tender and lightly charred, about 6 minutes per side. Remove from the grill and set aside.
In a large skillet over medium heat, heat the butter. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for another minute.
Add the spinach to the skillet and cook until wilted, about 3 minutes. Remove from heat and set aside.
On each tortilla, sprinkle half of the cheese, followed by the grilled potatoes and spinach mixture. Sprinkle the remaining cheese on top.
Fold the tortilla in half and press lightly to seal.
Place the quesadillas on the grill and cook until the cheese is melted and the tortilla is crispy, about 4 minutes per side.
Remove from the grill and let cool for a few minutes before slicing into wedges. Serve with cilantro leaves, salsa, and sour cream, if desired.
