
Instructions:
Preheat the oven to 350°F (180°C).
In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the kosher salt, baking powder, baking soda, bread flour, and cake flour. Gradually add this to the butter mixture, mixing until just combined.
Fold in the chopped chocolate until evenly distributed throughout the dough.
Using a cookie scoop or spoon, drop the dough onto parchment-lined baking sheets, leaving about 2 inches between each cookie.
Sprinkle each cookie with a pinch of sea salt flakes.
Bake for 12 to 15 minutes, or until the edges are golden brown and the centers are set.
Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
