
Instructions:
- In a medium bowl, mix together the mashed potatoes, cheddar cheese, flour, egg, garlic powder, salt, and pepper until well combined.
- Heat a large non-stick skillet over medium heat and add enough oil to coat the bottom of the pan.
- Using a 1/4-cup measuring cup, drop spoonfuls of the potato mixture into the hot oil.
- Flatten each spoonful with the back of a spatula and cook until the bottom is golden brown, about 3-4 minutes.
- Flip and cook until the other side is golden brown, another 3-4 minutes.
- Repeat with remaining potato mixture, adding more oil as needed.
- Serve hot, garnished with chopped chives or green onions if desired.
