Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the steamed broccoli, cheddar cheese, colby cheese, velveeta, flour, red pepper flakes, salt, and pepper.
  3. In a separate bowl, beat the eggs.
  4. In another bowl, mix together the panko crumbs.
  5. Shape the broccoli mixture into small balls, about the size of a golf ball.
  6. Dip each ball into the beaten eggs and then coat with the panko crumbs.
  7. Heat the oil in a large skillet over medium heat.
  8. Fry the balls until golden brown, about 2-3 minutes per side.
  9. Place the fried balls on the prepared baking sheet and bake for 10-15 minutes or until heated through.
  10. Serve hot with a dipping sauce of your choice. Enjoy!
