
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together the steamed broccoli, cheddar cheese, colby cheese, velveeta, flour, red pepper flakes, salt, and pepper.
- In a separate bowl, beat the eggs.
- In another bowl, mix together the panko crumbs.
- Shape the broccoli mixture into small balls, about the size of a golf ball.
- Dip each ball into the beaten eggs and then coat with the panko crumbs.
- Heat the oil in a large skillet over medium heat.
- Fry the balls until golden brown, about 2-3 minutes per side.
- Place the fried balls on the prepared baking sheet and bake for 10-15 minutes or until heated through.
- Serve hot with a dipping sauce of your choice. Enjoy!
