
Instructions:
- Preheat oven to 350°F (180°C). Grease a 9×5 inch loaf pan.
- In a large bowl, mix together mashed bananas, melted butter, baking soda, and salt.
- Stir in the sugar, beaten egg, and vanilla extract until combined.
- In a separate bowl, whisk together the flour and baking powder. Gradually add to the banana mixture, stirring until just blended.
- Pour batter into the prepared loaf pan and smooth the top. Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve, or store in an airtight container for up to 5 days. Enjoy!
