Sopapilla Cheesecake Bars Recipe
Ingredients:
Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed

Filling:
- 2 (8 oz) packages cream cheese, softened

Topping:
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a medium mixing bowl, combine the flour, sugar, baking powder, and salt.
- Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk until a dough forms. Press the dough into the bottom of the prepared baking dish.
- In a separate mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth.
- Add the eggs one at a time, making sure each is fully incorporated before adding the next. Stir in the flour.
- Pour the cream cheese mixture over the crust in the baking dish.
- In a small bowl, mix together the sugar and cinnamon. Sprinkle the mixture over the top of the cream cheese mixture.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool completely before cutting and serving.
