Strawberry Bread
Ingredients:
- 2 1/3 cups fresh strawberries, hulled and diced
- 1 large egg
- 2 tsp baking powder
- 2 1/8 cups flour
- 3/4 cup granulated sugar
- 2 cups powdered sugar
- 1/4 tsp salt
- 1 1/2 tsp vanilla extract
- 1/2 cup oil
- 2 tbsp butter, at room temperature
- 1 tbsp heavy cream or milk (optional)
- 1/2 cup milk
Instructions:
- Preheat the oven to 350°F (180°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, combine the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the butter and granulated sugar together until light and fluffy. Beat in the egg and vanilla extract.
- Gradually mix in the dry ingredients and the milk, alternating between the two, until just combined.
- Gently fold in the diced strawberries.
- Pour the batter into the prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool for 10 minutes before removing it from the pan and placing it on a wire rack to cool completely.
- While the bread is cooling, you can make a glaze by mixing the powdered sugar and heavy cream or milk (if using)
- Once the bread is cool, drizzle the glaze over the top of the bread.
- Serve the strawberry bread warm or at room temperature, and enjoy!
**Note: If you want your bread to be more sweet and rich you can increase the sugar quantity
**Note: If you want your bread to be more fluffy and not dense, you can increase the baking powder.
