Chili Mac and Cheese

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of beans, drained and rinsed
  • 1 (10 oz) can Rotel diced tomatoes and green chilies
  • 1 (8 oz) can tomato sauce
  • 4 cups beef broth
  • 2 cups elbow macaroni, dry
  • 2 1/2 tsp chili powder
  • 2 tbsp flour
  • 1/2 tsp paprika
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp oregano
  • 1 1/2 tsp cumin
  • Salt and pepper, to taste
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 8 oz Velveeta, cut into small cubes
  • 1/4 cup sour cream
  • Tortilla chips for topping

Directions:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain any excess fat.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the beans, diced tomatoes and green chilies, tomato sauce, beef broth, macaroni, chili powder, flour, paprika, smoked paprika, salt, oregano, cumin, and salt and pepper. Bring to a simmer and cook for 20-25 minutes, or until the macaroni is cooked through.
  4. Stir in the shredded cheese and Velveeta cubes until the cheese is melted and the sauce is smooth and creamy.
  5. Serve the chili mac and cheese in bowls, and top with diced avocado, sour cream, and tortilla chips.
